      This made a perfect side for our Thanksgiving Feast! I used a 12 oz. bag of prepared green beans that I could nuke instead of boil. I did make ahead and plunge them in an ice water bath. I added a bit more pancetta, cuz I love the stuff. I used both butter and EVOO. It was just delicious and still good the day after! Thanks for a wonderful addition to our Tday feast! 12/3 Update: I made this w/o the pancetta tonight and it was still awesome!

      wonderful vegetable....we really enjoyed it...I did add a little brown sugar at the end to sweeten it up a little...wonderful fancy vegetable to serve dinner guests...and so easy...

      Excellent way to serve green beans! I actually steamed, then chilled, the beans a few hours prior to company arriving and had the pancetta and shallots chopped and ready to go. It was very quick and easy to put together at the last minute. The balsamic just finishes this dish off perfectly! Very, very good. Thanks Toolie!

      This is terrific. I cook for 2 or 3 people, usually, so halved the recipe and it worked just fine to do so. I have made is using the pancetta and also with bacon and have to say that while the pancetta does add a bit, it works fine with bacon, too. The last time I did this recipe, I pre-cooked my greenbeans by steaming in the microwave for a few minutes instead of boiling them. This is easier and works fine. This is delicious, and worth it to chop those shallots!
