Another great, simple recipe found on Ingles Markets webpage. The fresh ingredients make this a winner every time.
- 1 lb fresh green beans
- 2 tomatoes, diced
- 1 garlic clove, chopped
- 1⁄4 cup onion, chopped
- 1 tablespoon olive oil
- 1 tablespoon red wine vinegar
- salt and pepper
- Place beans in a large pot, covering with water. Boil for 5-7 minutes. Drain.
- Heat oil in skillet. Add onion and garlic, sauteeing until garlic turns golden.
- Add tomatoes and beans and cook 2-3 minutes, tossing to coat beans with other ingredients. Transfer to serving bowl, tossing with vinegar and seasoning with salt and pepper to tase.
