This was a dish you got a lot in Ohio during the late summer.
- 1⁄4 lb salt pork, cut into 1/2-inch cubes
- 6 cups water
- 2 lbs fresh green beans, snapped
- 1 small onion
- 1⁄2 teaspoon pepper
- 12 new potatoes, washed and scrubbed
- Place salt pork and water in a large Dutch oven; cover and cook over medium heat 1 hour.
- Add green beans, onion, and pepper; cover and simmer 30 minutes.
- Add potatoes, cover and simmer 50 minutes or until vegetables are tender.
