  1. Put 2c sliced green or wax beans and 1c diced potatoes and chopped onion into a soup pot.
  2. Cover with water and boil until soft.
  3. Fry 4 slices of bacon and add bacon bits and fat to soup.
  4. Add about ½ pint of cream and simmer (sour cream is even more delicious).
  5. Some people like to add a "Mettwurscht" (sausage) to their "Bou'neschlupp"
  6. Add salt & pepper to taste.

I absolutely love this and have subbed ham for the bacon with just as delicious results. I personally prefer sour cream and in my own bowl add an extra dollop with black pepper! YUM!!!!! Thanks so much for posting.

Nice flavor and easy to make! I used 4 cups of water which was plenty - but next time I may sub out the water for veggie broth. I used half and half and when it was added to the pot it separated out due to the bacon grease.. .so I added a little cornstarch slurry to thicken up the soup a little and get rid of the separated milk/broth. The flavor is very good and I am enjoying it today for lunch. A great way to use the onion, potato and green beans in my coop box this week!
