Low Fat - great tasting, healthy salad

  1. Steam beans in large pot of boiling water - 4 - 5 minutes or still crunchy but cooked.
  2. Run under cold water to prevent overcooking.
  3. Rehydrate and drain sundried tomatoes.
  4. In a salad bowl, combine balsamic vinegar, salt and pepper.
  5. Add green beans, scallions, olives, capers and sundried tomatoes.
  6. Mix well.
  7. Sprinkle with parmesan cheese.
  8. Serve cold or at room temperature.
