This is another recipe from Green Mountain at Fox Run.It's a a fitness and healthy weight loss retreat for women only (a weight loss camp). The serving size is only a guess by me.

Ingredients Nutrition


  1. Boil or steam potatoes until tender, about 15 minutes.
  2. Drain well.
  3. Steam or microwave green beans until crisp-tender (4- 5 minutes).
  4. Drain well.
  5. Meanwhile in a large bowl, combine oil, lemon juice, lemon zest and chopped onions.
  6. Add warm potatoes and green beans to oil-lemon mixture and toss.
  7. Add chopped herbs and lightly toss.
  8. Top with shaved parmesan cheese, if desired. Serve warm, or refrigerate and serve cold.
