  1. Heat bananas, the 2 cups of water and salt to boiling; reduce heat. Cover and simmer until bananas are tender, about 5 minutes. Drain and cool.
  2. Cut bananas crosswise into 1/2" slices. Toss bananas and remaining ingredients with Vinaigrette Dressing.

I'm made versions of guacamole before but am not a big fan of the avocado, so I used just half of a small one in this recipe, but other than that the recipe was pretty much followed, although I did use lemon pepper instead of the usual S&P! Made for an interesting salad, & one that I'd make again for friends who are always looking for new ways to serve up bananas as well as avocadoes!
