  • In medium bowl, mix all tuna ingredients well. Refrigerate until ready.
  • In large bowl, mix hash brown, eggs, olive oil, flour until uniform.
  • Heat oven to 350.
  • Heat oil on flat grill or large frying pan.
  • Drop hash brown mix with Tablespoon or teaspoon, depending on need, flatten with spatula, grill 5-6 minutes per side. Keep pancakes warm inches oven.
  • When finished, line large baking pan with potato pancakes, top with tuna mix, sprinkle with goat cheese.
  • Bake in oven 10 minutes, last 2 under broiler. Serve hot.
