Greek Seafood Marinade

"This recipe was created for the Fish and Seafood Forum Wild Card challenge for ZWT6. This marinade can be used for any fish or shrimp."

ingredients

• 6 tablespoons extra virgin olive oil
• 3 tablespoons garlic, minced
• 2 teaspoons fresh thyme, chopped
• 1⁄4 cup fresh basil, chopped
• 3 tablespoons Greek oregano, chopped
• 1 lemon, zested
• 4 tablespoons lemon juice
• 1⁄4 cup ouzo
• salt and pepper, to taste

directions

1. Heat the olive oil in small skillet over medium heat.
2. Add garlic and saute for 2-3 minutes to infuse the garlic flavor in the oil.
3. Remove from heat; cool.
4. Combine the garlic mixture and all other ingredients in a small bowl.
5. Marinate fish or shrimp in a zip lock bag for 3-4 hours.
