Directions

  1. Put tomatoes, Olives, Mint, Parsley and beans in a large bowl and toss to combine.
  2. Put oil in pan set over medium head, add onions and garlic when they start to sizzle in oil remove from heat and pour over tomato mixture.
  3. Stir in lemon juice and add the feta season to taste with salt and pepper and toss well to combine.
  4. Set aside for 30 Minutes to allow flavours to infuse.
  5. Toss again at room temp with toasted bread and drizzle of oilve oil.
