Sometimes you just get a real craving for a DELICIOUS Greek salad. This one satisfies our palate every time. I serve it with Greek Chicken Breast Souvlaki & Greek Lemon Roasted Potatoes, pita bread/dip, and a glass of wine for a nice Greek dinner. I hope you Enjoy!

Directions

  1. Dice up the vegetables- I usually use a small red onion as I don't like it to overpower the salad. You can adjust the vegetables to your tastes.
  2. Place the vegetables in a bowl along with the olives and feta cheese.
  3. Mix olive oil, red wine vinegar, lemon juice, garlic, oregano, salt and pepper and pour over the vegetables.
  4. Usually I let everything sit and marinate in the fridge for approximately 1/2 an hour. This seems to marry the flavours! I like to serve it in a clear serving bowl as the colours are so fresh and appealing.

I altered the veggies to our taste/what was on hand. I didn't have a cucumber and we don't like red peppers. I added some chopped peppercinis and some freshly chopped parsley. Everything else I followed exactly and served it with the Chicken Souvlaki. EXCELLENT dish. I couldn't leave it alone while it was marinating it was so tasty. I hope to try it again soon with the cucumber but even missing it, the salad was still a colorful five star.
