This is a delicious salad that is so nutritious too! I made this almost as posted but, since I was packing this to take for my lunch and not serving on a bed of lettuce, I just added the marinade with the artichoke hearts and all the other ingredients. I also used brown and wild rice, which made is seem even healthier! Thanks for sharing this delicious salad. It would also make a great side dish, but it works well as lunch too!

I made this last weekend as a side dish and it was a nice change from the usual. I think next time I'll try brown rice instead.

Was a big hit! I made this appetizing rice salad for a pot-luck and it was a big hit. Only made two very minor changes in that I used Brown rice instead of white and also used an English cucumber instead of a regular cucumber so that there was no peeling or deseeding needed. This is a true keeper that will make its way to more pot-lucks, thanks for the post.
I hope you get a chance to try this Nancy-it's really, really good. I've made it today for dinner tonight and am having a hard time not just scoffing the whole bowl myself. I made a half recipe (so a small onion and tomato and 1 1/2 cups cooked rice etc. etc.) I didn't have marinated artichokes so will drizzle over a flavoured olive oil when I serve it tonight and I only had green olives (I think black would be prettier) but for all that, the flavour is outstanding.
