  • Chop garlic coarsely. Sprinkle with salt and mash with the side of the knife blade.
  • Place the garlic mixture in a small bowl; whisk in tomato juice, lemon juice, oil, oregano and pepper.
  • Toss lettuce, cucumbers, tomatoes and red onion with the dressing.
  • Scatter olives and feta cheese over the top and serve.

  1. We really enjoyed this! Yippee, I got to use my mortar and pestle for the garlic and salt, adding about 1/4 tsp. of the lemon to mix it up a bit more. Also used the cherry tomatoes and the kalamata olives. The tomato juice was a nice addition I would not have thought of. Thanks for posting. Made for ZWT 6.
