A hearty dip served around the Mediterranean. Served with with chips, bread sticks or kebabs.


  1. Boil potato.
  2. Soak almonds in hot water for 15 minutes.
  3. Drain.
  4. Remove skin from the almonds.
  5. Combines the garlic, salt, almonds, and oil in a food processor.
  6. Blend into a paste.
  7. Add potato, water, lemon juice and vinegar to the garlic-almond paste.
  8. Blend again.
  9. Season with pepper.
  10. Check seasoning.
  11. Remove to a serving bowl.
  12. Serve cold or at room temperature.
