Serve with fried fish and on salads. May also be used to brush on fish and shellfish when grilling.
- 1⁄2 cup olive oil
- 3 tablespoons fresh lemon juice
- 2 teaspoons chopped fresh oregano or 2 teaspoons parsley
- 1⁄2 teaspoon salt
- fresh ground black pepper
- Combine ingredients in a bowl and beat well with a fork until blended.
- As oil and lemon will separate on standing, dressing must be beaten again just before use.
