Greek Macaroni Bake

- 3⁄4 lb ground beef
- 1⁄2 cup chopped onion
- 6 ounces tomato paste
- 1⁄2 teaspoon salt
- 1⁄4 teaspoon cinnamon
- 1⁄2 cup mayonnaise
- 1⁄4 cup flour
- 2 cups milk
- 2 eggs
- 1⁄3 cup parmesan cheese
- 1⁄4 teaspoon nutmeg
- 16 ounces elbow macaroni
directions
- Brown beef and onions. Drain fat. Stir in next 3 ingredients. Set aside.
- In med. saucepan, combine next 2 ingredients. Gradually stir in milk. Cook and stir over med. heat until mixture thickens (DO NOT BOIL).
- Beat next 3 ingredients. Gradually stir in sauce. Add macaroni. Spoon 1/2 macaroni mixture into 2-quart casserole dish. Cover with meat mixture and top with remaining macaroni.
- Bake at 350 for 45 minutes.

This was pretty darn good for just a good casserole dish. I increased the hamburg to 1 1/2 as we like more meat. Decreased the noodles to a little over a cup as there never seems to be enough cheesy sauce for us and boy I was glad I did because there wouldn't have been. The cheesy stuff was real light and fluffy, really different and good. I think it would have been even better if you did more with the tomatoe sauce hamburg mixture which I will do next time. Worth a try and glad I came across it as it was a little different.
