This is a wonderful recipe! I had my doubts about not adding any milk, but it turned out delicious. The only change I made was to add 1 teaspoon of Tangerine Liquor to give the citrus flavor a kick. Thanks for posting!

This is the most lovely lemony rice pudding! I used basmati rice and cooked it for 12 minutes and rested 5 minutes, then proceeded with the recipe. In fact...I made 2....one for the neighbours!!! Oh...and I used the zest in a whole lemon between the two. Thank you for sharing this yummy recipe.

Very Good! I have also had success replacing the brown sugar with Stevia.

I love rice puddings and this was no exception! I cheated and used Minute Rice, but I wanted my dessert fast! I was a teensy bit skeptical about the lemon, but loved it! It provided a nice tang that complimented the cinnamon wonderfully. I was so surprised that this didn't have milk in it, but it really does turn out creamy. I beat real fast, since I was worried my eggs would curdle (but they didn't). Was three servings for myself too much?! Roxygirl Roxygirl

This was absolutely fabulous! All I had in the house was long grain rice, so I had to add a little more water. I was afraid it wouldn't get soft enough, but after I added the eggs it ended up with a light, fluffy texture. I can't imagine how creamy it would be with a short grain rice, like sushi rice! I used Egg Beaters in place of the 2 eggs, and it still had the most wonderful flavor. I can't wait to make this again.

Very different and very delicious! Made as written, except left off the cinnamon. A definite do again. Topped with a little whipped cream before serving. Thanks so much for sharing.

Delicious! I made this today for my lemon-lovin' DH. I doubled the recipe and made it with Italian Aborio short grain rice, so it was very creamy even without the milk, I increased the sugar amount a bit and used half white sugar and half brown, since I doubled the recipe, I used 1/2 cup each, which worked out fine. I also increased the lemon juice just a little also. eebrag, my DH and myself really enjoyed this! Thanks for sharing!...Kittencal:)
