- 236.59 ml cucumber, diced
- 236.59 ml tomatoes, chopped
- 118.29 ml chickpeas, drained and rinsed
- 59.14 ml kalamata olive, pitted and sliced
- 59.14 ml scallion, sliced
- 59.14 ml parsley, coarsely chopped
- 1 lemon, juice of
- 4.92 ml garlic, minced
- 4.92 ml sugar
- salt and pepper, to taste
- 29.58-44.37 ml extra virgin olive oil
- 44.37 ml chopped of fresh mint
directions
- Combine the cucumbers, tomatoes, chickpeas, olives, scallions and parsley in a large bowl.
- Whisk together lemon juice, garlic, sugar, salt and pepper for the vinaigrette in a bowl.
- Drizzle olive oil into lemon juice mixture in a steady stream.
- Stir in mint and adjust seasonings to taste.
- Toss salad with vinaigrette just before serving. Serve at room temperature.
- Serve with toasted pita bread pieces, if desired.
