easy, quick, tasty.
- cook chips in deep fryer or pan with oil.
- put cooked chips into large fry pan pour beaten eggs over top and cook on medium heat, lightly stirring until eggs are set.
Very rich and filling. A quick breakfast served with fresh orange juice and pita bread. I cheated and used store bought frozen shoestring fries and cooked the egg with a little butter in a cast iron pan folding it over into a half moon shape like an omelette. Something I would make again but I would probably bake the fries to be less fattening next time.
