  1. cook chips in deep fryer or pan with oil.
  2. put cooked chips into large fry pan pour beaten eggs over top and cook on medium heat, lightly stirring until eggs are set.

Very rich and filling. A quick breakfast served with fresh orange juice and pita bread. I cheated and used store bought frozen shoestring fries and cooked the egg with a little butter in a cast iron pan folding it over into a half moon shape like an omelette. Something I would make again but I would probably bake the fries to be less fattening next time.
