Simple and delicious. My husband and I eat salad for lunch every day and this one will be put on the rotation list. We used some leftover chicken, but I'll bet this salad would be just as good without it. I cut down just a little bit on the lemon juice and couldn't find fresh mint. Good recipe.
This is a perfect salad! I used dried herbs...let it marinate all day (the dressing)...dinner was wonderful!! Simple and delicious way to use up left over chicken!! Thank you Sharon!
This is a great meal salad. I did not have cooked chicken so I used a chicken breast, flattened it, seasoned with a seasoning salt blend and grilled on the contact grill. The chicken was then sliced and placed on top of the remaining ingredients with the dressing drizzled over all. The dressing is nice and light and does not mask the flavors of the fresh ingredients. This was very good. The dressing was a little to lemony for DH, but I liked it. I did add a touch of garlic to it, and used the tomato and herb flavored feta cheese. I also added some leftover couscous to it.
This was an excellent salad that I served for a luncheon. Very fresh tasting and the dressing was very refreshing with the flavors of lemon and mint. Everyone commented on how delicious they thought it tasted with a few requests for the recipe. Thanks for sharing the recipe.

Just used the dressing this time, on top of herbed chicken over greens. It was great and really complimented the lemon and herbs on the chicken. Will use this one a lot! And, will come back to try the salad, too!
This was a GREAT FLAVORFUL REFRESHING lunch! I used trio of hearts salad mix, tuna in place of chicken, a whole can of garbanzos and grape tomatoes. I couldn't get more than 1/4 tsp of fresh oregano from my mowed over oregano plant so had to compensate with 1/2 tbsp dried. Made for Beverage tag.

A wonderful way to use up leftovers! I had leftover dressing from a Greek salad made a few days so I used that instead of your dressing, which I will try the next time I make this salad.
