  • Cake

  • 1 (18 1/4 ounce) box yellow cake mix
  • 34 cup corn oil
  • 1 (3 1/2 ounce) package instant lemon pudding
  • 34 cup water
  • 4 eggs
  • Glaze

  • 2 cups powdered sugar
  • 2 tablespoons butter, melted
  • 13 cup frozen orange juice concentrate, plus
  • 2 tablespoons frozen orange juice concentrate

directions

  • Cake: Place all ingredients in large mixing bowl.
  • Beat on low for 2 minutes.
  • Bake in a greased and floured tube pan at 325° for 45 minutes.
  • Glaze: Stir over low heat until sugar is dissolved.
  • Punch holes in hot cake; pour glaze over slowly.
  • Cool completely and turn out on serving plate.

  1. This is the BEST cake ever!! I don't have a tube pan, works just fine in a regular cake pan, just not as fancy! I start checking at 30 mins however. Must serve with vanilla ice cream!
     
  2. Very easy to make, & definitely most tasty! I was afraid the lemon pudding might detract from the orange flavor in the glaze, but it didn't, & that might be because I added almost a tablespoon of finely minced orange zest just before glazing the cake! This is certainly a keeper of a recipe! [Made & reviewed in Everyday Is a Holiday tag]
