Great Fruit Salad

"Delicious cool, mixed fruit salad. So good for those backyard gatherings of friends. Sauce can be made 4-5 days in advance and refrigerated."

  • 3 tablespoons flour
  • 12 ounces pineapple juice
  • 6 ounces orange juice concentrate, thawed
  • 34 cup sugar
  • 14 cup honey
  • 14 cup lemon juice
  • fresh fruit, i like orange slices,strawberries,blueberries,and sliced peaches

directions

  • In saucepan, mix all EXCEPT fruit.
  • Bring to a boil.
  • Cook and stir 1-1/2 minutes, or until thick and bubbly.
  • Cool; serve over fruit.

  1. I liked this salad! It is the perfect dish for a potluck picnic. I made mine with strawberries, blueberries, honeydew and canteloupe. Yummy! (Be sure and serve this with a slotted spoon.)
     
  2. This has become a family favorite. Even the people in our family that don't really care for fruit like the taste of this. The sauce enhances the taste of the fruit. I use about half as much corn starch in place of the flour. I think it dissolves better.
     
  3. Great fruit salad! I used strawberries, blueberries, peaches, and kiwi and the sauce matched well with all these fruits. I halved the recipe and still had lots of sauce left over - I think it would be great to flavor a smoothie too. Thanks for posting your recipe!
     
  4. To make things easier, I bought a bag of frozen mixed fruit at Sams Club let it thaw for about 45 minutes, and then combined it with the sauce. I should have read over the recipe better, because I didn't realize how long the sauce would take to cool and was stretched for time.

After DH and I moved away from the farm, and to the city...I haven't done as much cooking and very little canning. But I do come to Zaar and look for new recipes once in a while. I'm still cooking Zaar!! I like to play at Facebook, with my family and friends. A lot of my Zaar friends are there!! Yay! It's a good way to keep in touch. We travel more. We're looking at the European trips now. Hope to go in the springtime. I really want to see London, I think I lived there in a past life, I've been obsessed with it since I was 10 years old!!
