Great American Volumetric Burger

From the book "The Volumetrics Weight-Control Plan." This recipe sounds intriguing and I want to try it out on my family.

  1. Stir together the bulgur and 1/2 cup boiling water in a small bowl; let stand 30 minutes or until water is absorbed and bulgur is tender.
  2. Meanwhile, in a nonstick skillet, heat the olive oil over medium heat. Add the onion and sugar; saute until the onion is lightly browned, about 10 minutes. Stir in the vinegar; saute about 20 seconds, stirring until vinegar evaporates. Remove the skillet from the heat.
  3. In a small bowl, mix the plumped bulgur, onion mixture, beef, carrot, garlic, Worcestershire sauce, salt and pepper.
  4. Shape into 3/4-thick patties.
  5. Grill or broil the burger patties on a rack sprayed with vegetable cooking spray until browned and cooked, about 5 minutes per side.
  6. Serve on bun with desired condiments.

I'm not sure how to rate these...the flavor was REALLY nice, but I think the recipe really needs a binder of some sort. Even after I chilled the mixture the patties were very moist and fell apart when I tried to flip them on the grill. I ended up just cooking them on one side for a long time, which worked out fine, but the ones that stayed together on the grill fell apart when transferred to a bun. I'm not a burger expert, but I'm sure there's a way to fix this; an egg, maybe? As it were I just poured barbecue sauce on and thought of it as a sloppy joe :). Thanks for posting, this is a yummy recipe that I will either tweak with a binder or just make into sloppy joes LOL. Made for Healthy Choices tag.
