Great American Potato Salad

I got this in my email from Kraft Foods, and it's pretty tasty. I doubled the eggs (kind of have a deviled egg fetish) and used dill pickles and a little dill pickle juice because I didn't have relish. Overall a quick and tasty little number.

• Total Time: 1 hrs
• Prep Time: 30 mins
• Cook Time: 30 mins

Ingredients:

Servings: 8

• ½ cup mayonnaise
• 1 tablespoon yellow mustard
• ½ teaspoon celery seed
• ½ teaspoon salt
• 1⁄8; teaspoon pepper
• 4 cups potatoes , cooked and cubed
• 1 onion , chopped
• 2 hard-cooked eggs , chopped
• 2 stalks celery , sliced
• 1⁄3; cup dill pickle relish

Directions:

1. Mix first 5 ingredients in large bowl.
2. Add remaining ingredients and mix lightly.
3. Refrigerate several hours or until chilled.

99.9% just like Mom's! I have always wished I had paid more attention to my Mom's recipes! She didn't have many, but the ones she did have were everyone's favorites. Thanks so much for bringing her potato salad back to life. I confess I did make two tiny concessions - I only used 1 tsp of mustard, and added chopped pimento - Mom liked a bit of color in her dish!
