From Murder on the Rocks by Karen MacInerney. Serve warm over pancackes, french toast or ice cream.
- 1 1⁄2 cups blueberries
- 1⁄4 cup maple syrup
- 1⁄2 lemon, juice of
- 1 teaspoon vanilla
- 2 teaspoons cornstarch (dissolved in a small amount of cold water)
- Bring blueberries and syrup to a simmer and cook until blueberries are hot and bubbly.
- Add lemon juice and vanilla and simmer a moment longer.
- Stir in cornstarch.
Absolutely fantastic and delicious over vanilla ice cream and pound cake. This was very easy and especially good using "Jersey Fresh" blueberries from this seasons harvest. Thanks for the recipe
Very easy to make & delicious. We thought it was more like 2 servings, though.
