I used to think that gravy was something that you used to help choke down overly dry turkey. But, with this recipe, I've found something that's so good that I'm using it for everything from putting on sandwiches to dipping bread.

  1. In a large pan, heat the butter until it melts. Add onions and mushrooms. Cook on medium-low heat for 5 minutes.
  2. Add garlic and cook for another 5-10 minutes, until the onions are lightly browned and softened.
  3. Add flour to the pan, and stir until blended into a paste. Blend in the salt and pepper and cook for 2 to 3 minutes.
  4. Add the chicken stock mixture and brandy. Cook uncovered for 4 to 5 minutes until thickened. Season to taste, and serve.
