Grated Potatoes #5FIX

"5-Ingredient Fix Contest Entry. This recipe is delicious and goes with every meal! My mother made it for years and now, my grandchildren request it. It is also very simple to make now that simply potatoes has fresh hash browns. I thought it wouldnt taste as good but it does. I used to have to peel potatoes, boil them, then grate them. It was a timely process but now it's fast and easy! Bonus! Leftovers are great with eggs the next morning for breakfast."

  • Preheat oven to 350 degrees. Spray a casserole dish with nonstick spray. Dice onion. Cut butter into thin pats.
  • Layer a thin layer of potatoes, pats of butter, onion, salt and pepper. Continue to layer in this fashion until all ingredients are used up, making sure the last layer has butter, salt and pepper on the top.
  • Bake at 350 degrees for about an hour or until top of the potatoes are slightly crisp. Serve.
