I made this bread from the blog Cookie Madness ( and it's really good. A bit dry but a great taste and healthy.

  1. Preheat oven to 350 degrees F. Spray a 9×5 inch loaf pan with flour-added cooking spray.
  2. Mix the flour, baking powder and salt together and set aside.
  3. In a large mixing bowl, mix together the carrots, oil, sugar, eggs, milk and granola.
  4. Add the flour mixture to the granola mixture and stir gently until mixed. Pour mixture into greased pan and bake for 55-60 minutes. Cool in pan for 10 minutes. Turn from pan.

What a wonderful, moist and yummy cake-like bread! Mmmm, the carrots blend into the crunchy granola dough very nicely and the combination makes for a very yummy and special bread!
I used yogurt in place of the buttermilk and maybe thats why my bread was very moist and not dry at all.
Also I reduced the sugar to 1/4 for half the recipe and used a sugar reduced granola. Other than that I stuck to the recipe and luved it!
