My Granny made this veggie side while I was growing up. I hated veggies and would actually eat this one.
- 1 small onion, minced
- 1⁄4 cup chopped green onion
- 1 lb carrot, cut in rounds then in half blanched
- 1 lb smoked sausage, cut in rounds then in half
- 1 teaspoon olive oil
- 1⁄4 teaspoon salt
- 1⁄4 teaspoon black pepper
- 1 teaspoon minced garlic
- Cook onion and garlic down in olive oil in pot. Add in sausage and cook for a few mins -- add in blanched carrots, salt and pepper -- cook till carrots are soft -- add in green onions -- cook for two minutes.
