Hello sue lau. I have been looking and trying out various fried cornbread recipes and today I found your here on food.Com. I tried it and it is delicious and so easy to make!!! This is the very best fried cornbread recipe I have ever had!!! Thank you for sharing it with us!!!
This was so good. I added some sugar as someone else suggested. I also added some melted butter and extra water to thin them out. Next time I'm going to add some minced onion. Everyone should try this!

What a fast and easy way to have cornbread with your meals. I added a little sugar to the batter. I didn't measure the sugar, but it was about 2 - 3 Tbsps. They turned out yummy and tasted just like cornbread that you would bake in the oven. Thanks for another great recipe, Sue. Made for October, 2008 Aussie/NZ Swap.
Oh yeah, but in my neck of the woods we call them hoe cakes and I can't imagine eating field peas w/ham or greens without them. We also serve them with tomato gravy, fried eggs, grits and ham for breakfast. Any leftover cakes are served with cane syrup for a sweet and yummy after meal treat. This is the same recipe myself, my mom and granny used as well, so I know it's a winner. I urge everyone to try them, as they are great with vegetable soups as well.
