Having enjoyed a wonderful bowl of Italian Wedding Soup after a busy morning in the city -I came home looking for a recipe. Must thank Andypandy for pointing me in the right direction. The chicken stock is a double wow - one I will be making for soups requiring chicken stock in the future. Good thing I had plenty of Italian parsley on hand! Made a small batch of meat balls and in trying to duplicate that which I had in the city went with a brothy soup - unable to find the escarole I used spinach - all in all a ten for the stock and the directions for Italian Wedding Soup - thank you and Grandma Lena for last weeks wonderful Sunday supper soup.
Delicious soup! I cooked the meatballs right in the main soup pot and it came out great.
absolutely delicious! so aromatic and flavorful! definately a great way to use left over soup broth too!!! made with the ricotta dumplings from 277573. HEAVENLY!!
