I'm sure the flavor of this relish is amazing but I am more concerned that there is no disclaimer mentioning the method used. This recipe is not canned and, for that reason, should be used within a week or two. It uses an open kettle method of boiling only which is no longer an approved method of preservation. Please don't unknowingly poison someone.

Best. Relish. Ever.
I made this with zucchini from my garden, and cant wait to make another batch, this time doubling up on the ingredients. This is a really tasty treat, DH and I ate half a jar at one meal LOL. Only change I made was to add 2 tsps red pepper flakes to give a little zing, as we are zingy kind of people.
This is 10 times better then normal relish-more flavor
