My mom got this recipe from her mom. The bars are moist and spicy, and keep well. You can drizzle the bars with a powdered sugar glaze, but usually mom served them plain.
- 1 cup raisins
- 1 cup water
- 1 cup sugar
- 1⁄2 cup shortening or 1⁄2 cup butter or 1⁄2 cup margarine
- 1⁄2 teaspoon cinnamon
- 1⁄2 teaspoon nutmeg
- 1⁄2 teaspoon clove
- 2 cups flour
- 1⁄2 teaspoon salt
- 1 teaspoon baking soda
- 1 cup chopped pecans or 1 cup walnuts
- 1⁄2 cup chopped dates
- Pre-heat oven to 350°F.
- Grease a 10x15-inch jellyroll pan and set aside.
- In a medium saucepan, bring the raisins, water, sugar and shortening to a boil.
- Add cinnamon, nutmeg and cloves and allow to cool.
- While the spice mixture is cooling, sift together the flour, salt and baking soda.
- Add to cooled mixture and stir well.
- Stir in chopped nuts and dates.
- Spread in prepared pan and bake for about 30 minutes.
- May be frosted, or very good left plain Makes 25 (2 x 3") bars.
I made these last night to have on hand for the holidays. I was very pleased with their taste and texture. They are a real comfort food. I loved the way the raisins soaked up the spice mixture in the hot liquid. It took a while for the hot mixture to cool, but it was worth the wait. I put a very light powdered sugar glaze on them while they were still a little warm. I will make these again. Delicious.
