  • Preheat oven to 160 Celcius.
  • To make base: Mixed biscuits crumbs and butter in a bowl, Press into a 20cm springform tin and chill until required.
  • To make filling:

  • Cream cheese and ricotta until smooth.
  • Add eggs, sugar, cornflour, lemon rind and juice.
  • Mix until smooth.
  • Pour over refrigerated base.
  • Bake for 50 minutes or until firm.
  • Refrigerate until cold.
  • Serve with lemon curd and cream.
