In searching the recipes already posted, I see they are very similar. However, this uses less filling with the strawberries- which really allows the freshness to shine.
- Cook water, cornstarch, and sugar until thick. Add jello. Cool slightly.
- Slice berries into shell. Pour jello mixture over berries. Chill.
- Serve with whipped cream, as desired.
My DH adores strawberry pie and this one was a hit with him! It was nice to have more fresh strawberry flavor then jellied filling. I made two pies so used the whole box of jello and doubled the other ingredients. Used frozen Pillsbury pie shells that I thawed and baked before filling. Will add this recipe to my favorites.
