directions

  • combine first 6 ingredients in a large bowl and mix well.
  • stir in the liquids and then the chopped apple.
  • spoon into greased muffin tin about 2/3 full.
  • bake at 400-f for 20-25 minutes.

  1. These muffins were easy to make and taste delicious. I made them for my 3 year old son and he loved them. Taste much better than box muffin mix. Very moist! Enjoy
     
  2. i had to use skim milk but i did use real homemade butter. i also used 1 3/4 large gala apples since i'm of the opinion that fruit muffins should contain **FRUIT!** and not just fruit. everything else i went by the recipe. this filled 12 muffin tins to a little overflowing but i like it that way since it means nice full fluffy muffins. these didn't expand as much as i was expecting but they were still a good size and not overly sweet. i think they would have been better with granny smith apples or another tart, sturdy type and maybe a bit more cinnamon but these were really tasty. more summery tasting than fallish but that's ok. might taste more like fall if i added a bit of cloves and nutmeg for depth. thanks!
     
  3. WOW!!!!! I am 16 weeks pregnant and was craving something baked with apples...this hit the spot!! These are so moist and flavorful!! I used a granny smith apple, added some walnuts, and am a little worried that I might eat the whole dozen right now!! Baby and I are in 7th heaven ; )
     
  4. Really easy to make. Left peels on the apple, used fuji. Made with whole wheat pastry flour and dehydrated cane juice.
     
  5. Love these muffins! They are fresh out of the oven and my husband and I have already eaten 4 between us. I used almond milk in place of milk and oil instead of butter. Great for when you need to make something with ingredients you probably already have! Perfect for fall.

I was looking for a good muffin recipe to use some very ripe apples with...so quick and easy to make, I read the comments and adjusted to 1/2 cup of white sugar instead of 1, and 1/2 teaspoon cinnamon, plus added two apples chopped...they are delicious! As an apple orchard owner, these are the best apple muffins I have made yet! Yummy :-)
     
  3. Delicious, easy - I have nothing bad to say about these muffins! I did half and half with the brown sugar and white, used mostly rye flour and some white, substituted coconut oil for butter and rice milk for the milk. And they were really delicious. Thanks for the great recipe!
