Grandma's Apple Cake

"My grandma made me this cake when I went to her house over Thanksgiving, and I really wanted to make some of my own so I searched the web for a recipe. This one comes from the Better Homes and Garden website but was originally published in a Midwest Living issue. It says to bake it for 45 minutes, but my cake was done in 30."

  • In a medium bowl, toss together the apples and baking soda; set aside.
  • In a large mixing bowl, beat together the sugar, Splenda, margarine and unsweetened applesauce with an electric mixer until creamed. Add egg and egg whites; beat well.
  • Stir together the flour, cinnamon, salt, and nutmeg. Add to large mixing bowl and beat until combined. Stir in apple mixture (If you so desire, you can add a cup of chopped walnuts to the mixture as well).
  • Evenly spread batter into a greased 13x9x2-inch baking pan. Bake in a 350 degree F oven for 30-45 minutes. Serve warm or at room temperature topped with Cool Whip.
