- 4 cups peeled and diced cooking apples
- 2 teaspoons baking soda
- 1⁄4 cup margarine, softened
- 1⁄4 cup unsweetened applesauce
- 1 cup granulated sugar
- 1 cup Splenda sugar substitute
- 1 egg
- 2 egg whites
- 2 cups all-purpose flour
- 1 teaspoon cinnamon
- 1⁄2 teaspoon ground nutmeg
- 1⁄2 teaspoon salt
directions
- In a medium bowl, toss together the apples and baking soda; set aside.
- In a large mixing bowl, beat together the sugar, Splenda, margarine and unsweetened applesauce with an electric mixer until creamed. Add egg and egg whites; beat well.
- Stir together the flour, cinnamon, salt, and nutmeg. Add to large mixing bowl and beat until combined. Stir in apple mixture (If you so desire, you can add a cup of chopped walnuts to the mixture as well).
- Evenly spread batter into a greased 13x9x2-inch baking pan. Bake in a 350 degree F oven for 30-45 minutes. Serve warm or at room temperature topped with Cool Whip.
