Grandma Sugar's Shell Macaroni and Cheese

  • Cook macaroni 10 minutes in boiling salted water.
  • Coat microwave safe casserole dish with melted butter.
  • Put cheese cubes, milk, and pepper in butter-coated, 2-quart casserole dish and microwave six minutes on medium power or until cheese is melted. Stir until it creates cheese sauce.
  • Add cooked macaroni to the cheese sauce. Stir until all macaroni shells are coated with cheese sauce.
  • Slice cheddar cheese into approximately 3/8" slices and insert slices into macaroni and cheese sauce mixture.
  • Bake at 350 degrees for 35 minutes or until browned.

  1. OMG this is so cheesy. I love cheese but this was a bit much for us. Next time I would only use two cups of Velveeta. I did add 1/2 teaspoon of pepper and my family thought it could have used more. This was good and everyone ate it but did comment that it had too much cheese.
     
  2. Definitely extra cheesy in the final results. Some of the cheese did not blend as well as I would have liked so I guess I'm more accustomed to making a roux first to start off my cheese but this is definitely a quicker way to put it all together. I think it needs a bit more flavor as it was a little lacking and I added a lot of fresh ground pepper after baking. It was nice not to have to prepare a breadcrumb crust and just serve this as is straight from the oven. The top got nicely golden in 30 minutes. So glad I found this through the I Recommend Tag Game.
     
  3. This was extremely cheesy & needed some research. I cannot buy Velveeta in the U.K. (though it used to be sold here) . I learnt too that 'sharp' Cheddar refers to mature/aged cheese. (I don't find Cheddar at all 'sharp' myself, what is called 'mature', I find very smooth, but it may be different in the U.S. I attempted to melt Kraft Dairylea, but it does not really make a sauce, doesn't melt right. Some websites say it does, but again, it may be differently processed in the U.S. Tried Laughing Cow, same story. We don't have branded 'Swiss' Cheese in the U.K. either which I've often seen on cooking websites. SO! I have some Velveeta Cheese on its way to me from GERMANY!!! (Presumably sold to US servicemen there). Meanwhile, I made this with Mature (very) Cheddar & 'Mexican' cheese (in our supermarkets, Mex cheese is orange, spicy & flecked with multi-colour peppers & onions). I made again with various cheese blends; Gouda, Emmenthal, Gorgonzola, Blue cheese etc. I've normally used a shop jar for this, but fresh is so much better. I usually serve this tasty cheese-fest with grilled chicken/veggy-chicken fillet or a veggy burger (shop or homemade) of many variations with lots of different salads to 'cut through; the fat.
     
  4. So cheesy and stick to your ribs good! My DS, DD and I thought it was awesome! I did add a little mustard in with the cheese for a little added flavor. It was so yummy!
     
  5. Very good. I added an extra 1/4 teaspoon of pepper, but this was an excellent dish. I will make this agaain.
