A very gourmet way to use up the leftover bits of smoked mackerel we have, which is a real favourite at our house. You could easily multiply this for a great party pleaser, I think, though you'd need to assemble it at the last minute so it wouldn't go all soggy.
- 2 slices granary bread
- 1 tablespoon horseradish cream
- 1⁄2 orange, peeled and thinly sliced into rounds
- 2 slices boneless smoked mackerel, skinned and flaked
- Lightly toast bread slices. Spread each slice with horseradish cream. Top with orange slices and pieces of mackerel. Grill/broil under medium-low heat 2-3 minutes.
this was an interesting combination, and i really liked it. I didnt have granary, so put it on crusty white loaf, and it was lovely, thanks for sharing
