After 26 years of eating this potato salad, I finally broke my gram down enough for her to give me the recipe!! :D This is the best and ONLY potato salad that I will eat. It's definitely one that needs to be made ahead so that the flavors can combine. Enjoy!!

Ingredients Nutrition

  • 3 lbs potatoes, cubed i prefer them peeled but you can leave the skins if you like the flavor
  • 2 hard-boiled eggs, diced
  • 2 stalks celery, chopped
  • 12 small onion, chopped
  • 1 cup mayonnaise (I was given explicit instructions to use only Hellmann's)
  • salt and pepper

Directions

  1. Boil potatoes until tender, drain and allow to cool for about 5 minutes.
  2. In a large bowl fold potatoes with veggies, eggs, seasonings.
  3. Gently mix in mayo until everything is well dressed, this may take the whole cup sometimes not.
  4. Keep chilled until served.
