Shes just full of sweet love, passed on her recipe for her FAMOUS CARROT CAKE to me while recently making a visit in to Texas to see my newborn grandson. Enjoy."

ingredients

2 cups plain flour
2 cups sugar
4 eggs
3 cups carrots
1 ¹⁄₂ cups corn oil
2 teaspoons cinnamon
¹⁄₂ teaspoon salt
1 teaspoon baking powder
2 teaspoons baking soda
¹⁄₂ teaspoon vanilla
Frosting
1 cup chopped pecans
1 box powdered sugar
1 teaspoon vanilla
1 -8 ounce cream cheese
¹⁄₂ cup oleo

directions

Cake Mix: Shredd carrots. Mix all dry ingredients, add oil, eggs and vinilla. Blend well. Bake @ 350' for 30-minutes or until done. Pour mix in 3-9 inch pans or loaf pans.
Iceing Mix: Mix cream cheese, oleo, sugar, vanilla and pecans. Spread mixture on cake.
