Delicious and easy. I used 1/2 cup slpenda instead of sugar. Also, crushed a vanilla wafer (not too fine) and put it in the bottom of a mini foil liners (a whole wafer is too large.) Then filled the cup 3/4 full. Made great bite-sized snacks for our Christmas party. Thanks for sharing your recipe with us.

I agree with chelleshocked, I didn't really like these, they didn't have enough sweetness and richness for me.
I liked these, but there is something missing for me and I can't exactly pinpoint what. They don't taste as much like cheesecake as I wanted them to. Thanks for sharing!
These cheesecakes are absolutely amazing considering the amazing ease of cooking. Of course, I blame you for the weight i'll gain from these.
My mom used to make these so I was happy to find a recipe here! They were easy to make and everyone seemed to really enjoy them. I made half with gluten free pecan cookies (I'm celiac) which were a little too big and half with regular vanilla wafers which were just right. They are just like my mom used to make for company.
