This is a corn casserole that I have been making. The grands love it.
- 1 (15 ounce) can creamed corn
- 1 (15 ounce) can corn
- 1 egg
- 2 tablespoons Jiffy cornbread mix
- 1 tablespoon sugar
- salt & pepper
- 1⁄2 cup milk
- 1⁄8 cup margarine
- Melt margarine.
- Mix all ingredients together.
- Pour in baking dish.
- Bake 400* for 30 minutes or until set.
Here's another take on what I like to call corn pudding, & IT DOES MAKE VERY A VERY SATISFYING CASSEROLE! I was tempted to add another can of corn kernels but didn't this time around ~ Perhaps another time I'll just get the additional corn off of a couple of fresh cobs! A very nice change from cornbread!
