Gramma's Easy, Healthy Pumpkin Cookies

Gey Gramma use to make these in the truckload full back in the day, moist, tasty and still a classic even years after she passed away.

  1. preheat oven to 375°.
  2. Cream margarine and sugar in mixer. Add eggs, pumpkin, spices, salt, baking soda and baking powder.
  3. Mix in flours.
  4. With wooden spoon, mix in remaining ingredients.
  5. Drop teaspoonfuls onto greased cookie sheet.
  6. Bake for 12-15 minutes.

Thank you for a yummy, healthy cookie for those times I need something sweet! I did replace the brown sugar with 1 cup turbinado sugar and 3/4 cup natural applesauce. I also replaced all of the flour with whole white wheat flour and the margerine with organic butter. These cookies are very soft and moist. I will be making these again!
