Though I did skip step #2, I did make this as posted, (without step 2). I chilled this for 2 hours, and served this on some serving bowls, with a couple of my friends whom I volunteer with at the hospital while watching the game. The ingredients were a nice combo combined with the sour cream, as we all enjoyed this, as the 4 of us cleaned up the bowl. Made for PRMR tag.
- 4 ounces gouda cheese, finely shredded
- 1⁄4 cup sour cream
- 1⁄4 cup pecans, very finely chopped
- cracker, for serving

- Bring cheese to room temperature in a medium mixing bowl (allow 30 minutes). Add sour cream and pecans. Beat with an electric mixer until combined and mixture is creamy. Cover and chill up to 1 hour. If mixture is too firm, let stand for a few minutes to soften before piping.
- To serve, spoon cheese mixture into a pastry bag fitted with a very large star tip (1/2 inch). Pipe cheese mixture onto assorted crackers and/or vegetable slices.
