Grilled cheese, apple, peanut butter and raisin bread sandwiches will get your day off to a healthy and happy start!

  1. Spread 4 slices of bread with peanut butter.
  2. Top each with 1 slice of Mozzarella, 1/4 of the apple slices, and 1 slice of Cheddar.
  3. Cover with remaining bread.
  4. Melt butter in a large skillet, grill, in batches, until browned on both sides and cheese has melted.

I like to try a new recipe, and a new kind of grilled cheese sandwich is even better! My dad, who makes our bread, made cinnamon-raisin bread, upon which I put creamy peanut butter with a few grapenuts, some shredded mozzarella cheese, a quarter of a Gala apple, and 1 slice American cheese. I grilled it for a while, and it was the perfect breakfast sandwich! Thanks, Lorac, for sharing your recipe.

You know I can't leave well enough alone! Tried it as written with exception of using 9 grain bread instead of raisin bread. WAS WONDERFUL!! Then the next time I made it, I changed the apples, changed the cheese and it was just as good! THANK YOU for a great recipe that didn't run my blood sugar WAY up!!

Yum! I used an excellent whole wheat cinnamon raisin bread and only had smooth peanut butter on hand. As written, the recipe is great. I have also subbed tart granny smith apples and marbled co-jack cheese for the others. Original recipe, or with a few changes, either way the sandwich is great.
