ingredients
- 118.29 ml honey
- 236.59 ml natural-style peanut butter, unsalted
- 59.14 ml canola oil
- 9.85 ml vanilla extract
- 1 egg
- 354.88 ml flax seed meal
- 9.85 ml cinnamon
- 1.23-2.46 ml salt
- 118.29 ml sunflower seeds
- 118.29 ml flaked coconut
- 118.29 ml raisins
- 118.29 ml dried cranberries
- 118.29 ml chopped almonds
- 118.29 ml chopped pecans
- 473.18 ml old fashioned oats
directions
- Preheat oven to 350 degrees.
- Combine honey, peanut butter, oil, vanilla, and egg in large bowl and mix well.
- Add flaxseed meal, cinnamon, salt and mix well.
- Add remaining ingredients and mix till it is all combined.
- Press into a 13x9-inch baking pan that has been sprayed with non-stick cooking spray (or line the pan with foil and spray the foil).
- Bake for 25-35 minutes, until the edges are beginning to brown.
- Let cool completely, transfer to cutting board and cut into bars.

These are yummy! I made a few changes: natural unsweetened cashew butter instead of peanut, 1 cup flax meal, sesame seeds instead of sunflower, cranberries and orange flavored cranberries (no raisins), walnuts and pecans (no almonds) and I added a little ginger. I took JenniCat's advice and used 2 8x8s instead- they went in for 25 mins and were a bit dark around the edges, but tasted great. Thanks, I will make these often! they are thick and have an almost cake like consistency- muffin bar meets chewy granola bar!

We really enjoyed these. They were a bit crumbly as Al Al warned. I noticed that they were the most crumbly in the center of the pan. The mixture on the edge stayed together much better. My solution is to bake them in two 8X8 square pans instead of the larger pan. I think this should help them hold together better!

I'm a stay at home mom of a 5 year old boy, a 3 year old girl and an almost year old sweet baby girl. I love to cook (it's what I do for fun as well as out of necessity) and to entertain--and am finally learning to enjoy doing the dishes afterward. :) My husband loves to try new foods and likes lots of flavor, so it makes cooking really fun! We also have recently been studying a lot on health and nutrition and have been enjoying experimenting with new recipes that have a lot more whole food ingredients. I am learning why I always liked home-cooked food better than packaged and prepared stuff. :) I love my family and enjoy feeding them well!
I mainly post recipes for my own convenience (nutritional facts, to get them off the little scrap of paper and where I can find them...) but if anyone else can use or enjoy them, go right ahead! Maybe someday I will get all of mine on here, but for now, I love looking at all of everyone else's recipes and have gotten some great "keepers" for our family.
Please note that cooking times on any of my recipes are just guesses as I rarely have the opportunity to cook an entire dish or meal without interruption. :) I usually start dinner around 3:30 or 4 while the kids are napping, then pick up again around 5:30 or 5:45 and still get interrupted several times! :)
