Filling
- 4 small apples, cored and thinly sliced
- 1⁄4 cup raisins
- 1⁄3 cup strawberry jam

Base
- 1⁄2 cup sugar
- 1⁄4 cup oil
- 1⁄3 cup soymilk
- 3 ripe bananas
- 2 cups rolled oats
- 1 cup flour
- 1⁄4 cup flax seed
- 2 tablespoons sunflower seeds
- 2 tablespoons sesame seeds or 2 tablespoons mixed finely chopped nuts
- 1 teaspoon cinnamon
- 1⁄4 teaspoon baking powder
- 1⁄4 teaspoon baking soda
- 1⁄2 teaspoon salt

For the filling:
- Steam the apple slices until soft. Plump raisins in the apple steaming water, then drain. Remove the apple peels (if desired) and mash. Add raisins and jam to the apple mash.

For the base:
- Preheat oven to 350°F.
- In a small bowl, combine the first four ingredients and mix till smooth.
- In a larger bowl, combine the remaining ingredients and mix thoroughly.
- Add the moist ingredients to the dry ingredients, and mix until just blended. If too dry, add more soy milk.
- Spread half of the mixture in a 4x9 cake pan or casserole. Spread the filling in the middle, then spread the remaining mixture over the top.
- Bake for 30-40 minutes, or until the top is brown. Cool and slice into bars.

I love how healthy and simple this recipe is. Hardly any fat or sugar yet really tasty. I decided to make this to bring in to work for a staff meeting. Good thing I did a trial run, because the size of the baking dish is way off. The bars were way too thick, and it was cake-like(more than three inches thick). The taste was great, however, so when I made it the second time, I used a 9x13 baking dish and that was much better. The bars were still a bit thick and moist, but everyone at worked seemed to like them. I served it with a side of fruit salad and vanilla yogurt. Also, I used my own fruit filling as I have a bunch of mixed fruit compote to use up. I will keep this recipe to make again, hubby is happy with it as well. Thanks for sharing.

Pet peeve: Not making things from scratch. Too many products contain unnecessary additives such as preservatives, artificial flavour/colour, not to mention the neurotoxins we spray on our fruits and veggies!
Loves to: Buy organic! Some things taste the same, but carrots and potatoes taste SOOO much better. Eating healthy and keeping crap out is your best bet to staying healthy!
