I found this recipe a couple of years ago in a book on diabetes control. Its really good and good for you. Its the only salad dressing we use. My husband likes it with hemp oil but I prefer the flax seed oil. I keep a bottle of both in our fridge. Its easy to double the recipe. The liquied lecithin helps keep in emulsified...I recommend it. You can find it a health food stores.

Ingredients Nutrition

  • 14 cup olive oil
  • 14 cup flax seed oil (or hemp oil)
  • 14 cup cider vinegar
  • 1 (2/3 ounce) packagegood seasoning Italian salad dressing mix
  • 12 teaspoon liquid lecithin (optional)

Directions

  1. Combine all ingredients in a jar (I use a mason jar) and shake well. store in refrigerator. Keeps indefinitely.
