I found this recipe a couple of years ago in a book on diabetes control. Its really good and good for you. Its the only salad dressing we use. My husband likes it with hemp oil but I prefer the flax seed oil. I keep a bottle of both in our fridge. Its easy to double the recipe. The liquied lecithin helps keep in emulsified...I recommend it. You can find it a health food stores.
- 1⁄4 cup olive oil
- 1⁄4 cup flax seed oil (or hemp oil)
- 1⁄4 cup cider vinegar
- 1 (2/3 ounce) packagegood seasoning Italian salad dressing mix
- 1⁄2 teaspoon liquid lecithin (optional)
- Combine all ingredients in a jar (I use a mason jar) and shake well. store in refrigerator. Keeps indefinitely.
