- 630.98 ml all-purpose flour
- 630.98 ml rolled oats (or quick oats)
- 236.59 ml packed brown sugar
- 236.59 ml white sugar
- 236.59 ml chopped nuts (optional)
- 118.29 ml dry baking chocolate (Hershey's or Nestle's)
- 9.85 ml baking powder
- 9.85 ml baking soda
- 4.92 ml nutmeg
- 2.46 ml salt
- 236.59 ml olive oil
- 3 egg whites
- 177.44 ml of liquid non-dairy coffee creamer (vanilla-nut flavored Coffeemate is great!)
- 9.85 ml vanilla
directions
- Mix dry ingredients together in large bowl.
- Fold the oil, egg, and vanilla into the dry ingredients. The dough is thick and sticky so you will need to use your hands to mix it thoroughly.
- Drop cookies by spoonful, 2 inches apart on a lightly greased cookie sheet (I grease my cookie sheets with non-cholesterol cooking spray).
- Bake at 350 degrees for 11 to 13 minutes.
